Serves: 1

Ingredients:

  • 1/2 avocado, stoned and peeled
  • 1 small clove of garlic, crushed
  • A squeeze of fresh lemon juice
  • 1 tsp mayonnaise
  • 1 small soft tortilla (wholemeal if possible)
  • 1 small cooked chicken breast, sliced
  • A handful of wild rocket leaves
  • Salt and freshly ground black pepper to taste

Method:

  1. In a bowl, roughly mash the avocado with the garlic, lemon juice, and mayonnaise until creamy.
  2. Gently warm the tortilla in a dry pan for a few seconds on each side, then spread the avocado mixture evenly across the tortilla.
  3. Arrange the sliced chicken breast and rocket leaves on top of the avocado spread. Season with salt and freshly ground black pepper.
  4. Roll up the tortilla, slice it in half if you like, and enjoy!

Tip: Feel free to add a little extra lemon juice for a zingier flavour or some chilli flakes for a spicy kick.
