Ingredients:
- 1/2 avocado, stoned and peeled
- 1 small clove of garlic, crushed
- A squeeze of fresh lemon juice
- 1 tsp mayonnaise
- 1 small soft tortilla (wholemeal if possible)
- 1 small cooked chicken breast, sliced
- A handful of wild rocket leaves
- Salt and freshly ground black pepper to taste
Method:
- In a bowl, roughly mash the avocado with the garlic, lemon juice, and mayonnaise until creamy.
- Gently warm the tortilla in a dry pan for a few seconds on each side, then spread the avocado mixture evenly across the tortilla.
- Arrange the sliced chicken breast and rocket leaves on top of the avocado spread. Season with salt and freshly ground black pepper.
- Roll up the tortilla, slice it in half if you like, and enjoy!
